Yes, aging egg whites can help reduce the moisture and achieve a more stable meringue. But honey, save some time and just bring the egg whites to room temp. 

I've been doing this for years, and the macarons come out just fine.

Snickerdoodle Cheesecake Cookie Recipe πŸͺ

Cookie dough:
1 cup unsalted butter, softened
1 cup granulated sugar
Β½ cup  light brown sugar, packed
2 large eggs
2 tsp vanilla extract
2 ΒΎ cups (330g) all-purpose flour
1 Β½ tsp cream of tartar
1 tsp baking soda
Β½ tsp ground cinnamon
1/4 tsp nutmeg
1/8 tsp ground ginger
ΒΌ tsp salt

 Cheesecake Filling:
8 oz (225g) cream cheese, softened
ΒΌ cup (50g) granulated sugar
1 tsp vanilla bean extract

Cinnamon Sugar Coating:
ΒΌ cup (50g) granulated sugar
2 tsp ground cinnamon

---Instructions:
Prepare the filling:

In a medium bowl, beat the softened cream cheese, sugar, and vanilla extract together until smooth.
Scoop out small teaspoon-sized portions of the cream cheese mixture onto a parchment-lined baking sheet. Freeze for at least 1 hour, or until solid.

For the Snickerdoodle Cookie Dough:

1.  On medium speed in the bowl of a stand mixer, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2 mins).

2. Turn the mixer on low, add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract. Stop the mixer.

3. In a separate bowl, whisk together the flour, cream of tartar, baking soda, cinnamon, ground ginger, nutmeg, and salt.

4.  Turn the mixer on low, and gradually add the dry ingredients to the wet mixture, mixing until just combined. Chill the dough for about 30 minutes to make it easier to handle.

5. Line a large baking sheet with parchment paper, put it aside.

6. Scoop about 3 tablespoons of chilled cookie dough and flatten it in your hand. Place a frozen cheesecake filling ball in the center, then wrap the dough around it, ensuring the filling is fully covered.
Roll the dough ball in the cinnamon-sugar mixture to coat.

7. Place onto the prepared baking sheet, leaving about 2 inches of space in between each cookie.

8. Cover and refrigerate the cookie dough for 2 hours or overnight.

9.  Preheat the oven to 350. Bake the cookies for 15-16 minutes until the edges are golden brown, but the centers are still soft.
Let the cookies cool completely on baking sheet.

The reason why your macarons keep breaking at the slightest touch is because you over folded the macaron batter. 

When you over fold, the meringue in the macaron batter breaks down, and it causes the macaron batter to loosen and spread during baking. This leads to fragile or wrinkled macaron shells. πŸ˜”

Here's how to correctly fold the macaron batter: 
After you have gently folded the dry ingredients, continue folding until it looks like a fairly thick cake batter. When you scoop some of the batter up and it falls from the spatula at a steady pace without it breaking, STOP βœ‹πŸ½ πŸ›‘ folding immediately.

You can also use the figure 8 test; if you can make one figure 8 in the bowl when the macaron batter falls from the spatula, it's ready to pipe.

Just keep practicing. You will get it eventually.
