I have created beautiful dessert tables for many events over the years, but weddings are my absolute favorite. πŸ˜πŸ‘ŒπŸ½

Since I set up a few hours before the event, I usually see the bride after the wedding, or I get a quick glance at her when she's taking pictures.

This time, I was able to see the brides facial expression when she saw the table, and she was thrilled with the outcome. πŸ₯°

Honey.. It's ok to say no! It's impossible to take everyone's order, and please stop feeling bad when you say the 2 letter N word because a client is asking for something your baking business doesn't offer.

☝🏽 Here's an idea, let's say "no" without saying "no." 

Check it out. Say these replies instead:

βœ…οΈ "Unfortunately, we don't offer those services. However, we do offer this" (here's your chance to talk about what you do have, maybe something similar to what the client is looking for)

βœ…οΈ "It would have been my pleasure to provide desserts for you, but I don't offer (whatever it is they need), but I can recommend another local baker that does." (One of my favorites, you can pass the job on to one of your baker friends. Most likely, they will do the same for you. And it saves the client time  from looking elsewhere)

βœ…οΈ "My apologies, I am not available on that day due to another scheduled event. However, I am available on (another day), and I would be more than happy to assist you then." (This lets the client know that even though you are busy that day, you still want to help them in the future).

It's all about communicating, having good customer service, and remaining professional. That will really help your business in the long run.

My favorite almond flour to use is from @bluediamond. It's never oily, and it tastes amazing. 

πŸͺ™πŸ’° To save some money, I recommend buying it in bulk, the 3lb bags at Sam's Club. They will last a lot longer than the smaller bags at your local grocery store.

If you are a baker who is tired of the long process of making multiple macaron batches for different colors, this is for you. 

You can actually use the same method for more than 2 colors. Use the same process of measuring the weight of your mixing bowl with and without the macaron batter and subtracting those amounts from each other. 

Take that amount and divide it by the number of colors you will be using:
βž—οΈβž–οΈ Here's an example of the math:

Bowl measurements without batter: 789g
Bowl measurements with batter: 1359

1359-789 = 570g
You need 3 colors:
570g Γ· 3 =190grams

You need 190 grams of macaron batter in 3 bowls to make 3 colors.

Now, the measurements of each bowl may not be exact, but try to get it as close as you can.

Having approximate even measurements can prevent you from over folding your divided batter.

Do this method only AFTER the dry ingredients have been mixed into the meringue and BEFORE you complete the macaronage.

When you try this out, you will save lots of time. I use this method for multiple colors and flavors for orders and farmers markets.

Use these 2 ingredients before the macaronage stage.
1️⃣. A small dab of purple gel food coloring. Put a very small amount  to the tip of the toothpick. Add it to your macaron batter.

2️⃣ White gel food coloring. Squeeze at least 8-10 drops in your macaron batter after adding the purple coloring.

Part 3: Best ingredients to use when making macarons.

πŸ‘ŽπŸ½ I don't agree with using ANY kind of food coloring when making macarons, and here's why...

I've seen some folks use the basic liquid food coloring that you would pick up from the grocery store, and they wonder why their macaron shells are wrinkled and weak. πŸ€¦πŸ½β€β™€οΈ

✨️ One of the golden rules when making macarons is to NEVER add any liquid to the meringue, especially if you add too much of it. This can cause the meringue to deflate, which is a culprit of macarons. πŸ˜’

πŸ‘πŸ½ So, use GEL food coloring instead. It's a thicker consistency than the liquid food coloring, and you can use a nice amount for the vibrant colors you desire.

πŸ‘πŸ½ Powdered food coloring is a good option as well.

The brands that I love to use for coloring my macs are @americolor and @chefmaster.

πŸ‘‰πŸΎ One of the most common mistakes when making macarons is not having a strong meringue. 

This can lead to weak and fragile macarons, which can spread too much while baking. It also causes wrinkled and hollow macaron shells.

To make a strong meringue, use COT (cream of tartar) and salt. You add these two ingredients before adding the sugar to the egg whites.

✨️ The  cream of tartar helps the egg whites hold onto air while mixing and helps the macarons rise while baking. 

✨️ The salt makes it harder to over whip the meringue because it makes the proteins more elastic, and it delays the denaturation process, which will prevent the meringue from breaking.
